YUM YUM.....FOOD!

My first ever Victoria Sponge and I'm really pleased with how it turned out!  There was me thinking that my oven wasn't cooking evenly and thankfully I was wrong. 
It proudly stands stood at 3.5" tall - it is no more!  The family made short work of it, I guess that's a good indication that it tasted okay.  Ooooh the beautiful baking smell drifted through the whole house on the day it was made and only having one cake tin meant I had to cook one layer, wait for it to cool before removing it from the tin, then cook the second layer.  So the smell lingered for longer than usual.
I used a spring-release loose-bottomed 9" baking tin from The Range and have no complaints about it at all.  On my next visit I'll definitely be buying another to make life easier!
This is the Hairy Bikers' recipe I used which produced a very light and fluffy sponge.
